Food additives are synthetic or natural substances added to food to improve and
preserve freshness, taste, texture, nutrition and appearance of food. There are
three characteristics of food additive, i.e.
a) It is substance to be added in food, which cannot be supplied as food
independently;
b) Both synthetic and natural substances are contained;
c) The aim of adding food additive is to maintain or improve flavor, taste and
appearance of food, as well as conservation of its nutritional qualities or
other qualities.
Using food additives such as colorant, color protecting agent, food bleaching agent, flavoring agent, emulsifying agent and thickening agent can greatly improve the sensory quality of food, adapting to various needs of people. Other food additives including anti-foaming agent, filter aid, stabilizing agent and coagulant are used in food processing, providing a higher efficiency in food processing operations.
